Tenuta Dornach Patrick Uccelli:

The winery Dornach, traces back to the 1788, even if the real history of the estate begins in 1836 when Anton Von Gelmini zu Kreuzhof purchases Dornach.

Today , the heirs of the families von Haussmann and von Gelmini, take care of the estate and the vineyards.

Who is behind the label:

Karoline is a biologist and is the pulsing heart of the company. She’s responsabile of everything that regards the biodiversity inside our estate. She takes care lovingly of everything that flowers, carries fruits, lays eggs and bleats and gives us milk.

Patrick, vine-dresser and oenologist. He takes care of the soil, the vines and follows the growth of the grapes to wine until it goes bottled.

Biodynamic as a way of leaving:

The motto is “In harmony with the nature”, and at Dornach is taken to an all different level, the style can be defined as closed circle biodynamic, in which the farm product are to support the family needs, rather that being a simple case of applying natural preparation to the land and sell the product to make a profit as other biodynamic producer around the world do.

The PIWI:

PIWI is the category that defines resistant varietal, which allow to produce sustainable wines with very low impact.

 

Souvignier Gris:

 is a white German grape variety that was created in 1983 by Dr. Norbert Becker. It is a cross between Seyval blanc and Zähringer. Even if originally was considered to be a cross between Cabernet Sauvignon and Bronner.

 

Vinification :

It takes place in old  Slavonian oak grand casks. The maceration part of contact with the skins lasts about two weeks.

Souvignier Gris n30 2021 vintage:

Description: This is an Amber (Orange) wine, with defined citrus and orange aromas, in support we can find some yellow flower and cardamom. The wine is dry, with a great length and persistency on the palate. A long finish, with a pragmatic candid orange peel after taste.

This wines is suitable for dishes like pan roasted foie gras, or with dishes with savoury and humami flavour compound.

Souvignier Gris, Cécile 40, 2022 vintage:

This is a limpid Amber (Orange) wine, at the olfactory exam it is persistent and intense with citrus, green tea, orange blossom, camomille and hay aromas. The wine is dry, fresher than savory with a great length and persistency on the palate, you can fell really a good citrate note after the tasting.  This wine is suitable for dishes like raw oysters, hard cheese like Comté, Remeker or Pecorino.
